When most people think of decaf coffee, they don’t picture craft. They picture compromise - flat, bitter, lifeless cups that are simply less. (sad!) But at Dekáf, we’re here to rewrite that narrative completely. Decaf coffee isn’t a shadow of “real” coffee. It’s a category of its own. One that deserves precision, creativity, and respect at every step of the journey.


Especially in how it’s roasted.


Because here’s the thing: decaf coffee can’t be roasted the same way as regular coffee. And when roasters treat it like an afterthought, that’s exactly what ends up in the cup.

DECAF COFFEE: THE BEAN IS ALREADY CHANGED

Before we even turn on the roaster, decaf coffee has already gone through a transformation. All of our coffees at Dekáf are decaffeinated using either the Swiss Water® Process or the Mountain Water Process - both are chemical-free methods that use water and filtration to gently remove caffeine from green coffee beans.


While these methods preserve much of the bean’s integrity, they still change its internal structure. Decaffeinated beans:

• Lose some of their natural moisture.

• Appear darker before roasting.

• Are more brittle and prone to scorching.

• Transfer heat differently than unprocessed beans.


Roasting decaf isn’t just about adjusting the roast time...it’s also about respecting the bean in its new form.

WHY MOST DECAF TASTES FLAT (AND HOW WE AVOID THAT)

The reality is, many roasters treat decaf as an afterthought. We'll give you the likely scenario: they might throw it into the roaster at the same profile as their full-caf beans, or cut corners with lower-quality decaf green coffee from the start. The result? Bitter, burnt, or overly baked coffee that reinforces the myth that decaf is always second-best.


But here’s the truth: when roasted with care, decaf can be just as complex, vibrant, and satisfying as any full-caf coffee.


At Dekáf, we don’t just tweak existing roast profiles. We create entirely new ones - from scratch - for each single origin and blend we offer.

PRECISION IS EVERYTHING: CRAFTING ROAST PROFILES FOR EVERY COFFEE

Every coffee in the Dekáf lineup has its own unique roast profile
That includes our 9 single origin decafs and 6 signature blends, all of which are developed with intention.


Even when we use the same origin in different blends, we roast that component differently depending on the goals of the final cup. Brightness, body, finish...all of it is carefully tuned.


This isn’t guesswork. It’s the result of deep experience, testing, and obsession with flavor.


If you don't know us already, quick background info on us over at Dekáf...we have over two decades of specialty coffee roasting experience, and that's what we're bringing to the table. But even with that pedigree, the approach we’ve taken for Dekáf has been built entirely from the ground up. Every roast profile was developed exclusively for decaffeinated coffee, using our own sensory benchmarks and flavor goals.


And the results speak for themselves. Take our Wordless Conversation blend, for example - it’s roasted significantly darker than any of the single origins that comprise it. That deeper development brings out rich, warm notes like crème brûlée and pomegranate smoke that simply wouldn’t appear in lighter roasts of the same coffees that make up the blend.


Another example: our Whisper Espresso blend. It’s a carefully calibrated roast where each component is developed in contrast to the others, resulting in an espresso that’s balanced, bold, and layered - with notes of toasty s’mores, blackberry jam, and toffee nut.


Every roast is its own story. And when it comes to decaf, you can’t just copy the script. You have to write a new one.

OUR EQUIPMENT IS BUILT FOR PURITY

We don’t just stop at roast curves. We’ve taken it a step further with the equipment we use to roast every batch.


• Our sample roasting and roast development happens on an Ikawa Pro100.

• All of our decaffeinated coffees are roasted and perfected on our dedicated Ghibli R15 roaster.

• For our low-caffeine blends, we use a separate Loring Kestrel roaster, which is designed for precision and environmental efficiency.

Because we never roast caffeinated coffee on the same equipment as our fully decaffeinated offerings. It’s not just about avoiding cross-contamination, it’s a reflection of our core brand philosophy: that decaf coffee deserves its own space, its own respect, and its own process.

One of the trickiest parts of roasting decaf is that you can’t judge the beans by appearance. Because of the water decaffeination process, green decaf beans appear darker before they’re roasted. That makes visual cues unreliable and increases the risk of overdevelopment or scorching.


That’s why sensory roasting is so important.


We roast in small batches. We take extensive notes. We taste obsessively. WE LISTEN. And we make micro-adjustments until we’re confident that we’ve brought out the best in every bean - whether it’s the jammy fruit and chocolate in our Papua New Guinea Kuta, or the layered, dessert-like profile of our Midnight Mirage blend.
