Swiss Water® Processing involves using Green Coffee Extract to tempt the caffeine out of the beans - immersing the beans in water already saturated with coffee’s natural compounds (minus the caffeine).
Mountain Water Processing follows similar principles to Swiss Water®. The coffee beans are gently soaked in pure, glacier-fed water (often from Pico de Orizaba) to dissolve the caffeine.
In both decaffeination processes, the caffeine-laden water passes through activated carbon filters to sweep away the caffeine molecules. This leaves only the rich flavor compounds of the beans behind for consistently delicious decaf.
