Originally pioneered in Switzerland, the Swiss Water® Process now operates in Canada. The gentle decaffeination method uses only water, temperature, and time. Zero chemical solvents.

Swiss Water® Processing involves using Green Coffee Extract to tempt the caffeine out of the beans -  immersing the beans in water already saturated with coffee’s natural compounds (minus the caffeine). Because the water is already “full” of flavor compounds, it selectively targets caffeine molecules, leaving flavor and aroma intact.

Activated carbon filters then sweep away the caffeine molecules, preserving the bright notes and captivating aromas unique to the coffee’s origin. The result? A truly elegant, rich-tasting decaf...all free of chemicals.

So while these brewing tips are here to help you get the best out of each roast, we always encourage you to experiment, adjust, and find what feels right for you. Play with the ratio, try a different method, and trust your palate. There’s no wrong way to enjoy a good cup!

We’re happy to ship our Mizudashi worldwide, but please note:

• While we pack fresh and cold, international shipments may arrive unrefrigerated due to extended transit times. Don’t worry - the concentrate is made with just purified water and extracted coffee, and remains safe to enjoy unless exposed to extreme heat (100°F+/38°C) for an extended period.

• Customs regulations vary by country. Please check local guidelines on importing food or liquid items before ordering.

• Shipping fees apply for international orders, and our U.S. free shipping threshold ($40+) does not apply outside the United States.
