Originally released as part of our Birthday Edition series, this Honduras COCASAM expression quickly earned a permanent place in our lineup. Roasted deep into an Italian roast profile, the cup reveals notes of cacao nib, roasted nuts, and smoky pipe tobacco with remarkable smoothness and depth.

Originally pioneered in Switzerland, the Swiss Water® Process now operates in Canada. The gentle decaffeination method uses only water, temperature, and time. Zero chemical solvents.
Swiss Water® Processing involves using Green Coffee Extract to tempt the caffeine out of the beans - immersing the beans in water already saturated with coffee’s natural compounds (minus the caffeine). Because the water is already “full” of flavor compounds, it selectively targets caffeine molecules, leaving flavor and aroma intact.
Activated carbon filters then sweep away the caffeine molecules, preserving the bright notes and captivating aromas unique to the coffee’s origin. The result? A truly elegant, rich-tasting decaf...all free of chemicals.

Sourced from COCASAM (Cooperativa Cafetalera Sanmarqueña) in San Marcos de Colón, Honduras, this coffee is grown by a network of small producers farming along the Botija ridge at elevations between 1,200 and 1,600 meters above sea level. Traditional shade-grown practices and slower maturation help develop the sweetness and structure that define the cup. The deep roast development brings warmth and richness while maintaining the balance and smoothness that make the coffee approachable across brewing methods.

Never tasted a coffee that was almost exactly like pure cacao. I had a little trouble dialing this one in for my home espresso machine, but I realized that as the coffee ages you need to grind coarser than when it’s fresh. As espresso, it’s an extremely strong and intense tasting coffee (I ended up making Americanos and found this is where it really shines). Considering buying another bag now
