Originally pioneered in Switzerland, the Swiss Water® Process now operates in Canada. The gentle decaffeination method uses only water, temperature, and time. Zero chemical solvents.
Swiss Water® Processing involves using Green Coffee Extract to tempt the caffeine out of the beans - immersing the beans in water already saturated with coffee’s natural compounds (minus the caffeine). Because the water is already “full” of flavor compounds, it selectively targets caffeine molecules, leaving flavor and aroma intact.
Activated carbon filters then sweep away the caffeine molecules, preserving the bright notes and captivating aromas unique to the coffee’s origin. The result? A truly elegant, rich-tasting decaf...all free of chemicals.
Here’s a quick brew chart of our general recommended starting points for brewing a single cup (or shot) of Dekáf coffee.
A quick and kind note:
Coffee is a personal experience and taste is wonderfully subjective. So while these brewing tips are here to help you get the best out of each roast, we always encourage you to experiment, adjust, and find what feels right for you. Play with the ratio, try a different method, and trust your palate. There’s no wrong way to enjoy a good cup!

THE YEAR OF THE FIRE HORSE
A LIMITED EDITION LUNAR NEW YEAR BLEND
The 2026 Prosperous Dekáf Blend marks the beginning of a new Lunar New Year tradition rooted in intention, renewal, and care. Inspired by the Year of the Fire Horse, this blend reflects forward energy balanced with restraint, offering a composed expression of confidence rather than intensity.
Instead of building the blend around contrast, we focused on harmony. Familiar coffees from Mexico and Guatemala offer warmth and steadiness - cups you can return to without thinking - while a special addition from East Timor brings a sense of discovery. It’s a meeting of continuity and change, chosen to reflect the rhythm of the season and the quiet excitement of starting something new.
The Fire Horse is often associated with independence, warmth, and momentum. These traits echo in the character of this coffee. Notes of candied orange, marron glacé, and dark chocolate unfold gradually in a full medium roast, inviting a slower pace and a more intentional moment with each cup.
This first Prosperous Blend is our way of welcoming the year ahead. It's meant to be shared, and returned to as a quiet annual ritual.
