Pour-Over Method: Perfection with Our Mexican Ki-Saya Single Origin.
The pour-over method is all about control. It allows you to highlight the clean, delicate notes in your Dekáf coffee, which gives your coffee a smooth finish.
We highly recommend trying this method with our Mexican Ki-Saya Single Origin.
What you'll need: a kettle, a scale, and a timer.
- Coffee (g): 28g
- Ratio: 1 : 12
- Grind: Use a medium grind, similar to the consistency of table salt.
- Water (ml): 340ml
- Water Temp: 200-205°F (93-96°C). Aim for a lower temp for dark roasts and a higher temp for light roasts.
- Brew Time: 3 - 3:30 min
How to brew the perfect pour-over:
- Rinse your paper filter with hot water to eliminate any paper taste.
Add your freshly ground beans to the filter.
Bloom: Start your timer and pour just enough hot water over the grounds to saturate them. Let it sit for 30-45 seconds. This "blooming" stage is where the magic happens, allowing the coffee to release its full flavor.
Pour Slowly: Continue pouring hot water in slow, steady circles, making sure to avoid the edges. Your total brew time should be between 3:00 and 3:30 minutes.
Once you're done, simply remove the dripper and enjoy your smooth, delicious cup of Ki-Saya.

Love a rich, full-bodied coffee? French press is the way to go. This brewing method gives you a bold, velvety cup that’s packed with flavor, and it's perfect for highlighting the rich notes of our Colombia Papayo.
What you'll need: A French press, a scale, and a timer.
- Coffee (g): 32g
- Ratio: 1 : 10.5
- Grind: Use a coarse grind.
- Water (ml): 340ml
- Water Temp: 200-205°F (93-96°C). Aim for a lower temp for dark roasts and a higher temp for light roasts.
- Brew Time: 4 - 5:00 min
How to make the perfect French press coffee:
Add your coarse-ground coffee beans to the bottom of the press.
Pour all of your hot water over the grounds, making sure to fully saturate them.
Give it a quick, gentle stir.
Place the lid on top, but don't press down yet! Let the coffee steep for 4 to 5 minutes.
After 4 to 5 minutes, slowly and steadily press the plunger all the way down.
Pour the coffee into your mug right away to keep it from getting bitter.

The trick is getting your grind just right to unlock that perfect balance of flavor and richness. Our Whisper Espresso is a blend crafted specifically to give you a velvety, rich shot without any of the caffeine.
What you'll need: An espresso machine, a tamper, and a good grinder.
- Coffee (g): 19g
- Ratio: 1 : 1.5
- Grind: Use a fine grind, similar to the consistency of powdered sugar. You may need to make small adjustments to this to get it just right for your specific machine.
- Water Output (g): 28g out
- Water Temp: 195-205°F (90-96°C). Aim for a lower temp for dark roasts and a higher temp for light roasts.
- Brew Time: 24 - 28 sec
How to pull a perfect shot of Dekáf espresso:
Make sure your espresso machine is fully heated and ready to go.
Grind your beans just before you pull the shot for maximum freshness.
Load your portafilter with the correct amount of coffee and tamp it down firmly and evenly.
Pull your shot. A perfect shot should take around 24-28 seconds to yield about 2 ounces of espresso.
If the shot pulls too fast and tastes sour, your grind is too coarse— make it a little finer. If it pulls too slowly and tastes bitter, your grind is too fine — make it a little coarser. Once you find the sweet spot, you've got it!

- Water Temp: Use cold or room temperature filtered water.
- Brew Time: 12 to 16 hours
How to make your cold brew concentrate:
- In your jar, mix your coarse-ground Dekáf coffee with filtered water. A great starting point is a ratio of 1 part coffee to 5 parts water.
Stir it gently, cover the jar, and place it in the fridge for 12-16 hours.
When it’s ready, strain out the grounds using a fine-mesh sieve or cheesecloth.
