Dekáf'd by way of Swiss Water®

Originally pioneered in Switzerland, the Swiss Water® Process now operates in Canada. The gentle decaffeination method uses only water, temperature, and time. Zero chemical solvents.

Swiss Water® Processing involves using Green Coffee Extract to tempt the caffeine out of the beans -  immersing the beans in water already saturated with coffee’s natural compounds (minus the caffeine). Because the water is already “full” of flavor compounds, it selectively targets caffeine molecules, leaving flavor and aroma intact.

Activated carbon filters then sweep away the caffeine molecules, preserving the bright notes and captivating aromas unique to the coffee’s origin. The result? A truly elegant, rich-tasting decaf...all free of chemicals.

A restrained roast can act like a clear lens, bringing the architecture of a blend into focus. That idea guide our light expression of A Sundown Affair.

Although Ethiopia Sidamo Bombe and Colombia Excelso appear throughout the release, lighter development changes what receives the most attention. Before the fruit becomes baked, jammy, or chocolate-led, it remains vivid and high-toned. Green apple gummy carries a tart candy snap, cranberry compote adds concentrated red fruit, and wildflower honey threads a delicate sweetness through both.

This expression is less concerned with flavors created by the roast than with preserving the lively details already held within the coffees. It's made for drinkers who want decaf with its brightness intact. This decaf still remembers the color of late summer.
